Hi, my name is Giuseppe De Carlo.

I was trained in Hotels in the early sixties when service was still at its peak. I worked as a waiter and in management all my life. In my capacity as Manager I trained 100s of waiters including the teaching of Gueridon service at the Bennelong restaurant in the famous Sydney Opera House.

I believe that I am qualified to teach as I have worked as a waiter in very fine restaurants and trained waiters while in management. I utilised these methods when I opened my first restaurant, The Abbey Restaurant in 1977. Subsequently other entrepreneurs followed my lead and created other Abbeys in the USA and other countries.

In my manual, I will show you from A-Z all the requirement you will need to be ready for service in (all) establishments) including Bar work. Restaurant services today all have one thing in common - set up a table, take orders and carry plates - that is the basic service.
